After cooking, carefully remove the bowl from the microwave it will be hot and stir in the vanilla extract. 4 Set the Caramels: Pour the caramel mixture into the prepared dish. If you chose to use sea salt as a topping, nows the time to sprinkle it on. Allow the caramel to cool and set. For easier cutting, refrigerate until firm. 5 Cut and Serve: Once set and cooled, cut into pieces. If at room temperature and slightly soft, a pizza cutter sprayed with non-stick spray works well for cutting.
